On roasting beans

Oko Caribe Organic Dominican Republic 2024 Harvest cacao beans arrived in the mail today. Roasting occurred upon receipt. Oven set to convection roast at 250 degrees for approx. 25 minutes total with stirring at 5 minute intervals. A sultry cacao aroma tendrils from the oven. They must be provided time to cool before attempting the cracking and winnowing.
